1 pineapple, 100g butter, 50g sugar, 6 tablespoons brown rum, 1 teaspoon cinnamon, nutmeg
Cut the pineapple lengthwise into four pieces. Then cut each piece in half again, up to the skin. Mix the butter, sugar, rum and cinnamon. Heat this mixture while stirring. Wrap the ends of the pineapple slices in aluminium foil. Brush the pineapple pieces with the butter-rum mixture and place them on the grill. Cover them and bake for about 15 minutes. Brush regularly with the butter mixture. Sprinkle the nutmeg over the baked pineapple. Enjoy! -
Rum Cake
For the cake: 250g flour, 180g sugar, 150g butter, 4 eggs, 1 packet of instant vanilla pudding powder, pinch of salt, a few drops of vanilla extract, ½ teaspoon of cinnamon, 50ml brown rum, 1 tablespoon of baking powder, ground walnuts
For the icing: 60g butter, 100g sugar, 50ml water, 50ml brown rum
Preheat the oven to 175°. Grease a cake tin with butter. Sprinkle the ground walnuts over the bottom of the cake tin. Put the butter, sugar, eggs, vanilla extract and vanilla pudding powder in a bowl and mix until smooth. Put the flour, baking powder, cinnamon and salt in a bowl and mix. Add the butter mixture and mix gently. Put the dough in the baking tin and bake for about 40 minutes in the preheated oven.
Mix the sugar with the water and the butter for the icing. Heat this mixture until the sugar has dissolved. Let it cool and stir in the rum. Let the cake cool and pour the icing over the cake. Enjoy!
